Baked Eggplant



 
Simple Eggplant that can be served as is or topped with sauce and cheese for a delish Eggplant Parmesean.
 
Baked Eggplant
1 large eggplant peeled and sliced into 1/4 inch slices
1/3 cup italian salad dressing
1 cup italian bread crumbs
 
Preheat oven to 350 degrees
Lightly spray a baking sheet with non stick spray.
Dip eggplant into the italian dressing until covered then press into the bread crumbs on all sides.
Place onto prepared baking sheet.  Once all eggplant has been coated, give them a quick spray on the top of the eggplant with the non stick spray to help them brown.
Bake in preheated oven for 20 minutes.
