We had a snow day this week. I don't know what it is about cold wintry days, but they just make me want to bake. Strawberry Chocolate Chip Muffins hit the spot.
Ingredients
2 cups Baking Mix (such as Bisquick)
2/3 cup Milk
1 teaspoon Vanilla
1/4 cup Mini Chocolate Chips
1/2 cup Chopped Strawberries
1/3 cup Sugar
1/3 cup Vegetable Oil
1 large Egg
Directions
Preheat oven to 425 degrees.
Lightly grease your muffin pan.
Stir together ingredients except fruit, until smooth. Gently fold in strawberries.
Evenly spoon batter into greased muffin tin.
Bake 18-22 minutes until golden brown.
