Paula Deen Pineapple Gooey Butter Cake


Paula Deen is of course one of my favorite cooks on tv.  She makes food that most always tastes amazing and is filled with love.  You can tell she is thinking of her boys and husband while making recipes and how much joy it will bring everyone as a family.



Ingredients
1 (18.25 ounce) package yellow cake mix
1/2 cup butter, melted
4 eggs
2 teaspoons vanilla extract – divided use
1 (8 ounce) package cream cheese – softened
3 cups confectioners’ sugar
1 (20 ounce) can crushed pineapple – drained
Method
Preheat oven to 350°F
In a large bowl combine cake mix, melted butter, 1 teaspoon of the vanilla extract and 2 eggs. Mix well either with a spoon or using a hand mixer. Pat into a 9 X 13 pan lightly coated with baking spray.
In the bowl of a stand mixer fitted with paddle attachment combine the cream cheese, 2 eggs, and remaining vanilla extract. Add in the confectioner’s sugar one cup at a time until full incorporated. Add the drained, crushed pineapple and combine well. Pour over cake layer.
Bake for 40 to 45 minutes. Remove from oven and cool on wire rack.
