Lemon Curd

I was making a wedding cake this weekend.  I hate having to toss all those egg yolks, seems like a waste.  So I whipped out my handy dandy Betty Crocker Cookbook and made Lemon Curd.  So good!  This is great as a filling in between cake layers or in a Lemon Meringue Pie.  I've been bad and just spoon it out like pudding ;)
